Rum balls are a great, easy way to fix a chocolate craving. They also make great little gifts. Rum isn’t necessary and if you’d like to leave it out, just add a little less coconut so that the mixture isn’t too dry.
Ingredients:
-One packet of plain sweet biscuits
-Three tablespoons of sifted cocoa
-One cup desiccated coconut
-One can of sweetened condensed milk
-3 tablespoons of rum
-Another cup of coconut to roll the rum balls in
Recipe:
1. Crush the biscuits in a food processor until they’re really fine. However, if you do not own a food processor, you could put the biscuits into a ziplock bag and use a rolling pin to beat the shit out of them until they’re good.
2. Mix the cocoa powder, coconut and condensed milk with the crushed biscuits and combine well until it becomes all stiff and ready looking. If they seem a bit too wet, just pop them into the fridge for half an hour or so before rolling them.
3. Get little amounts of the mixture and roll them into balls in your hand and then roll them in the extra coconut. It doesn’t necessarily need to be coconut, it could be crushed nuts of your choice of more cocoa powder, or even sprinkles.
